Description

A nutritious and flavorful wild rice pilaf perfect for batch cooking.


Ingredients

Scale
  • 2 cups wild rice
  • 4 cups vegetable broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 cup mushrooms, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. Rinse the wild rice under cold water.
  2. In a large pot, heat olive oil over medium heat.
  3. Add onion, garlic, carrot, and celery. Sauté until softened.
  4. Add mushrooms and cook for another 3 minutes.
  5. Stir in the wild rice, vegetable broth, thyme, salt, and pepper.
  6. Bring to a boil, then reduce heat and cover.
  7. Simmer for 45-50 minutes or until the rice is tender.
  8. Fluff with a fork and serve.
