Ingredients

- 2 cups wild rice
- 4 cups vegetable broth
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 cup mushrooms, sliced
- 2 tablespoons olive oil
- 1 teaspoon thyme
- Salt to taste
- Pepper to taste
Instructions
- Rinse the wild rice under cold water.
- In a large pot, heat olive oil over medium heat.
- Add onion, garlic, carrot, and celery. Sauté until softened.
- Add mushrooms and cook for another 3 minutes.
- Stir in the wild rice, vegetable broth, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and cover.
- Simmer for 45-50 minutes or until the rice is tender.
- Fluff with a fork and serve.

- This dish can be stored in the refrigerator for up to a week.
