Description

Delicious vegetarian stuffed peppers filled with rice, beans, and spices.


Ingredients

Scale
  • 4 bell peppers
  • 1 cup cooked rice
  • 1 can black beans, drained
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt to taste
  • 1 cup shredded cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix rice, black beans, corn, tomatoes, cumin, chili powder, and salt.
  4. Stuff the mixture into each bell pepper.
  5. Place stuffed peppers in a baking dish.
  6. Sprinkle cheese on top of each pepper.
  7. Bake for 25-30 minutes until peppers are tender.

Notes

  • You can use any color of bell peppers.
  • Feel free to add other vegetables.
  • These can be made ahead and frozen.
