Ingredients

  • 1 lb chicken breast, diced
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14 oz) diced tomatoes
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 2 cups spinach, chopped
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened.
  3. Stir in garlic and cook for 1 minute.
  4. Add diced chicken and cook until no longer pink.
  5. Pour in chicken broth and bring to a boil.
  6. Add diced tomatoes, cannellini beans, and Italian seasoning.
  7. Reduce heat and simmer for 15 minutes.
  8. Add spinach and cook for another 5 minutes.
  9. Season with salt and pepper before serving.
