Description

Ingredients

  • 4 medium zucchinis
  • 1 pound ground turkey
  • 1 cup diced tomatoes
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchinis in half lengthwise and scoop out the insides.
  3. In a skillet, cook the onion and garlic until soft.
  4. Add ground turkey and cook until browned.
  5. Stir in diced tomatoes, zucchini insides, Italian seasoning, salt, and pepper.
  6. Fill each zucchini half with the turkey mixture.
  7. Top with shredded mozzarella cheese.
  8. Bake for 25-30 minutes until the zucchinis are tender.
