Description
A hearty Italian turkey meatball soup that warms you up.
Ingredients

- 1 pound ground turkey
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 6 cups chicken broth
- 1 can diced tomatoes
- 2 cups spinach
- 1 cup carrots, diced
- 1 cup celery, diced
Instructions
- In a bowl, combine ground turkey, breadcrumbs, Parmesan, egg, garlic, Italian seasoning, salt, and pepper.
- Form mixture into small meatballs.
- In a pot, heat chicken broth over medium heat.
- Add diced tomatoes, carrots, and celery to the broth.
- Bring to a boil and add meatballs.
- Simmer for 20 minutes.
- Add spinach and cook for an additional 5 minutes.
- Serve hot.
Notes
- You can add other vegetables like zucchini or bell peppers.
- Adjust seasoning as per your taste.
- Leftovers can be stored in the fridge for up to 3 days.
