Description

A flavorful and spicy Thai red curry noodle soup.


Ingredients

  • 2 tablespoons red curry paste
  • 1 can coconut milk (400ml)
  • 4 cups vegetable broth
  • 200g rice noodles
  • 1 cup mixed vegetables (bell peppers, carrots, broccoli)
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • Fresh basil leaves for garnish
  • Sliced chili for garnish

Instructions

  1. Heat a pot over medium heat.
  2. Add red curry paste and cook for 1 minute.
  3. Pour in coconut milk and vegetable broth; stir well.
  4. Bring the mixture to a simmer.
  5. Add mixed vegetables and cook for 5 minutes.
  6. Cook rice noodles according to package instructions; drain.
  7. Add cooked noodles to the soup.
  8. Stir in soy sauce and lime juice.
  9. Serve hot, garnished with basil and sliced chili.
