Description
A nutritious and flavorful Teff Bowl inspired by Ethiopian cuisine.
Ingredients
Scale
- 1 cup teff grain
- 4 cups water
- 1/2 teaspoon salt
- 1 cup sautéed vegetables (carrots, bell peppers, and spinach)
- 1/2 cup cooked lentils
- 1/4 cup diced tomatoes
- 1 tablespoon olive oil
- 1 teaspoon berbere spice
Instructions
- Rinse the teff grain under cold water.
- In a pot, bring water and salt to a boil.
- Add teff to the boiling water.
- Reduce heat and simmer for 20 minutes, stirring occasionally.
- In another pan, heat olive oil and sauté vegetables until tender.
- Add cooked lentils, diced tomatoes, and berbere spice to the vegetable mixture.
- Mix well and cook for an additional 5 minutes.
- Serve teff in a bowl topped with sautéed vegetables and lentils.
Notes
- Adjust spice level to your preference.
- Can substitute vegetables based on availability.
- Garnish with fresh herbs if desired.
