Description

A nutritious and flavorful Teff Bowl inspired by Ethiopian cuisine.


Ingredients

Scale
  • 1 cup teff grain
  • 4 cups water
  • 1/2 teaspoon salt
  • 1 cup sautéed vegetables (carrots, bell peppers, and spinach)
  • 1/2 cup cooked lentils
  • 1/4 cup diced tomatoes
  • 1 tablespoon olive oil
  • 1 teaspoon berbere spice

Instructions

  1. Rinse the teff grain under cold water.
  2. In a pot, bring water and salt to a boil.
  3. Add teff to the boiling water.
  4. Reduce heat and simmer for 20 minutes, stirring occasionally.
  5. In another pan, heat olive oil and sauté vegetables until tender.
  6. Add cooked lentils, diced tomatoes, and berbere spice to the vegetable mixture.
  7. Mix well and cook for an additional 5 minutes.
  8. Serve teff in a bowl topped with sautéed vegetables and lentils.
