Description

A healthy and colorful dish made with spaghetti squash and fresh vegetables.


Ingredients

  • 1 medium spaghetti squash
  • 1 cup bell peppers, chopped
  • 1 cup zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half and remove the seeds.
  3. Drizzle with olive oil, salt, and pepper.
  4. Place cut side down on a baking sheet and roast for 40 minutes.
  5. In a pan, heat olive oil over medium heat. Add garlic and sauté for 1 minute.
  6. Add bell peppers and zucchini, cook until tender.
  7. Stir in cherry tomatoes and cook for 2 more minutes.
  8. Remove squash from the oven, scrape out the flesh with a fork.
  9. Combine squash strands with sautéed vegetables.
  10. Garnish with fresh basil before serving.

  • Choose a firm spaghetti squash for best results.
  • You can add other vegetables like broccoli or carrots.
