- 3 pounds beef chuck roast
- 1 tablespoon olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 1/4 cup lime juice
- 2 tablespoons apple cider vinegar
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1–2 chipotle peppers in adobo sauce
Instructions
- Heat olive oil in a skillet over medium heat.
- Brown the beef chuck roast on all sides.
- Place the beef in the slow cooker.
- Add chopped onion and minced garlic on top.
- In a bowl, mix lime juice, apple cider vinegar, chili powder, cumin, oregano, salt, pepper, and chipotle peppers.
- Pour the mixture over the beef in the slow cooker.
- Cover and cook on low for 8 hours or until tender.
- Shred the beef with two forks and mix with juices.

- Serve with tortillas or rice.
- Store leftovers in an airtight container.
