Description

Slow cooker beef barbacoa is a flavorful and tender dish made from beef cooked with spices and herbs.


Ingredients

  • 3 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1/4 cup lime juice
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 12 chipotle peppers in adobo sauce

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Brown the beef chuck roast on all sides.
  3. Place the beef in the slow cooker.
  4. Add chopped onion and minced garlic on top.
  5. In a bowl, mix lime juice, apple cider vinegar, chili powder, cumin, oregano, salt, pepper, and chipotle peppers.
  6. Pour the mixture over the beef in the slow cooker.
  7. Cover and cook on low for 8 hours or until tender.
  8. Shred the beef with two forks and mix with juices.
