Description

Ratatouille is a traditional French vegetable stew made from a variety of seasonal vegetables.


Ingredients

  • 2 medium eggplants, diced
  • 2 zucchini, sliced
  • 1 bell pepper, chopped

  • 2 cloves garlic, minced

Instructions

  4. Add zucchini and bell pepper, cook for another 5 minutes.
  5. Add tomatoes, thyme, basil, salt, and pepper.
  6. Cover and simmer for 30 minutes, stirring occasionally.
  7. Serve warm or at room temperature.
