Ingredients

  • 1 cup light corn syrup
  • 1 cup unsalted peanuts
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda

Instructions

  1. Grease a baking sheet with butter.
  2. In a saucepan, combine sugar and corn syrup over medium heat.
  3. Stir until the sugar dissolves.
  4. Add peanuts and butter, stirring constantly.
  5. Boil until mixture reaches 300°F (hard crack stage).
  6. Remove from heat and stir in vanilla and baking soda.
  7. Pour the mixture onto the greased baking sheet.
  8. Spread evenly and let cool completely.
  9. Brittle can be broken into pieces once cooled.
