Description

A classic vegetarian minestrone soup packed with vegetables and beans.


Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 garlic cloves, minced
  • 1 zucchini, diced
  • 1 cup green beans, chopped
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup pasta (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Sauté for 5 minutes.
  3. Add garlic, zucchini, and green beans. Cook for another 3 minutes.
  4. Add diced tomatoes, vegetable broth, beans, oregano, basil, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. If using pasta, add it and cook until al dente.
  7. Serve hot.

  • Adjust vegetables based on your preference.
  • This soup freezes well.
