- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- In a large pot, sauté the onion and garlic until soft.
- Add corn, chili powder, and cumin. Cook for 5 minutes.
- Pour in vegetable broth. Bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Stir in coconut milk and season with salt and pepper.
- Blend the soup until smooth, then return to the pot.
- Serve hot, garnished with cilantro and lime wedges.
