- 4 medium potatoes
- 1 cup black beans
- 1 cup corn
- 1 cup shredded cheese
- 1 avocado
- 1 cup salsa
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and dice the potatoes into small cubes.
- Toss the potatoes with olive oil, chili powder, and salt.
- Spread the potatoes on a baking sheet and bake for 25-30 minutes until crispy.
- In a bowl, mix black beans and corn.
- Once the potatoes are done, assemble the bowls with potatoes, black bean mixture, cheese, avocado, and salsa.
- Garnish with fresh cilantro.
