Ingredients

  • 4 medium potatoes
  • 1 cup black beans
  • 1 cup corn
  • 1 cup shredded cheese
  • 1 avocado
  • 1 cup salsa
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dice the potatoes into small cubes.
  3. Toss the potatoes with olive oil, chili powder, and salt.
  4. Spread the potatoes on a baking sheet and bake for 25-30 minutes until crispy.
  5. In a bowl, mix black beans and corn.
  6. Once the potatoes are done, assemble the bowls with potatoes, black bean mixture, cheese, avocado, and salsa.
  7. Garnish with fresh cilantro.
