Description
A hearty kielbasa potato soup that warms you up.
Ingredients

- 1 lb kielbasa, sliced
- 4 cups potatoes, diced
- 1 onion, chopped
- 2 carrots, sliced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add kielbasa and cook until browned.
- Add onion, carrots, and garlic; sauté until softened.
- Add potatoes and chicken broth; bring to a boil.
- Reduce heat and simmer until potatoes are tender.
- Stir in heavy cream; season with salt and pepper.
- Garnish with parsley before serving.
Notes
- Use any type of potatoes you prefer.
- Adjust the thickness by adding more or less broth.
- This soup can be made in advance and reheated.
