- 1 beef tenderloin (5–6 pounds)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- Salt and pepper to taste
- 1 cup red wine
Instructions
- Preheat your oven to 425°F (220°C).
- Trim excess fat from the beef tenderloin.
- In a bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper.
- Rub the spice mixture all over the beef tenderloin.
- Place the tenderloin in a roasting pan.
- Roast in the oven for 25-30 minutes or until desired doneness.
- Remove from oven and let it rest for 10 minutes.
- Deglaze the pan with red wine over medium heat to make a sauce.
- Slice the beef and serve with the sauce.
