Ingredients

  • 1 beef tenderloin (56 pounds)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • Salt and pepper to taste
  • 1 cup red wine

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Trim excess fat from the beef tenderloin.
  3. In a bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper.
  4. Rub the spice mixture all over the beef tenderloin.
  5. Place the tenderloin in a roasting pan.
  6. Roast in the oven for 25-30 minutes or until desired doneness.
