Ingredients

- 1 cup cooked lentils
- 1 cup oats
- 1/2 cup chopped onions
- 1/2 cup chopped bell pepper
- 2 cloves garlic, minced
- 1/4 cup tomato sauce
- 2 tablespoons soy sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup chopped fresh parsley
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix cooked lentils, oats, onions, bell pepper, and garlic.
- Add tomato sauce, soy sauce, thyme, salt, pepper, and parsley. Stir until well combined.
- Transfer the mixture to a greased loaf pan and press down firmly.
- Drizzle olive oil on top.
- Bake for 45 minutes or until golden brown.
- Let it cool before slicing and serving.
Notes
- Store leftovers in the fridge for up to a week.
- Can be frozen for up to three months.
- Great with a side of vegetables or salad.
