Description

A nutritious and filling high-protein lentil loaf that is perfect for any meal.


Ingredients

  • 1 cup cooked lentils
  • 1 cup oats
  • 1/2 cup chopped onions
  • 1/2 cup chopped bell pepper
  • 2 cloves garlic, minced
  • 1/4 cup tomato sauce
  • 2 tablespoons soy sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix cooked lentils, oats, onions, bell pepper, and garlic.
  3. Add tomato sauce, soy sauce, thyme, salt, pepper, and parsley. Stir until well combined.
  4. Transfer the mixture to a greased loaf pan and press down firmly.
  5. Drizzle olive oil on top.
  6. Bake for 45 minutes or until golden brown.
  7. Let it cool before slicing and serving.
