Description

Ingredients

  • 4 large eggs
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin
  • 1 tablespoon sugar
  • 1 teaspoon vegetable oil

Instructions

  1. In a bowl, whisk together eggs, soy sauce, mirin, and sugar.
  2. Heat a non-stick pan over medium heat and add vegetable oil.
  3. Pour a thin layer of the egg mixture into the pan, tilting to spread evenly.
  4. Once the edges start to set, use chopsticks to roll the omelet away from you.
  5. Push the rolled omelet to the back of the pan.
  6. Add more egg mixture to the pan, lifting the rolled omelet to let the uncooked egg flow underneath.
  7. Repeat the rolling process until all the egg mixture is cooked.
  8. Remove the omelet from the pan and let it cool slightly.
  9. Slice into pieces and serve.
