- 4 large eggs
- 2 tablespoons soy sauce
- 1 tablespoon mirin
- 1 tablespoon sugar
- 1 teaspoon vegetable oil
Instructions
- In a bowl, whisk together eggs, soy sauce, mirin, and sugar.
- Heat a non-stick pan over medium heat and add vegetable oil.
- Pour a thin layer of the egg mixture into the pan, tilting to spread evenly.
- Once the edges start to set, use chopsticks to roll the omelet away from you.
- Push the rolled omelet to the back of the pan.
- Add more egg mixture to the pan, lifting the rolled omelet to let the uncooked egg flow underneath.
- Repeat the rolling process until all the egg mixture is cooked.
- Remove the omelet from the pan and let it cool slightly.
- Slice into pieces and serve.
