Ingredients

  • 1 can chickpeas (15 oz), drained and rinsed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon ginger, minced
  • 1 can coconut milk (14 oz)
  • 1 can diced tomatoes (14 oz)
  • 2 tablespoons curry powder
  • 1 teaspoon cumin
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add onion and sauté until translucent.
  3. Add garlic and ginger, cooking for 1 minute.
  4. Stir in curry powder and cumin.
  5. Add chickpeas, coconut milk, and diced tomatoes.
  6. Simmer for 20 minutes.
  7. Season with salt.
  8. Garnish with fresh cilantro before serving.
