Ingredients

- 1 cup quinoa
- 2 cups water
- 1 can black beans, drained and rinsed
- 1 can kidney beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 bell pepper, diced
- 1 avocado, diced
- 1 lime, juiced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and water. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Remove from heat and let it sit for 5 minutes.
- Fluff quinoa with a fork.
- In a large bowl, combine black beans, kidney beans, corn, bell pepper, and avocado.
- In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
- Pour dressing over the bean mixture and toss to combine.
- Serve quinoa topped with the bean mixture.
Notes
- Adjust lime juice to taste.
- Add your favorite herbs for extra flavor.
- Store leftovers in the refrigerator for up to 3 days.
