Description

A nutritious high-protein bowl featuring beans and quinoa.


Ingredients

Scale
  • 1 cup quinoa
  • 2 cups water
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 bell pepper, diced
  • 1 avocado, diced
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Remove from heat and let it sit for 5 minutes.
  5. Fluff quinoa with a fork.
  6. In a large bowl, combine black beans, kidney beans, corn, bell pepper, and avocado.
  7. In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
  8. Pour dressing over the bean mixture and toss to combine.
  9. Serve quinoa topped with the bean mixture.

Notes
