- 1 prime rib roast (5–7 pounds)
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons olive oil
- 1 tablespoon salt
- 1 tablespoon black pepper
Instructions
- Preheat your oven to 450°F (232°C).
- In a bowl, mix garlic, rosemary, thyme, olive oil, salt, and pepper.
- Rub the herb mixture all over the prime rib roast.
- Place the roast on a rack in a roasting pan.
- Roast for 20 minutes at 450°F, then lower the temperature to 325°F (163°C).
- Continue roasting until the internal temperature reaches your desired doneness (about 135°F for medium-rare).
- Remove from the oven and let it rest for 20 minutes before slicing.

- Letting the meat rest helps retain juices.
