Ingredients

  • 1 tsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • 1 cup cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup feta cheese, crumbled
  • Fresh parsley, chopped for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add chopped onion and garlic, sauté until softened.
  3. Add ground beef, cook until browned.
  4. Stir in oregano, cumin, salt, and pepper.
  5. In a bowl, combine cooked rice or quinoa with beef mixture.
