Ingredients

  • 2 chicken breasts, boneless and skinless
  • 2 tablespoons olive oil
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup kalamata olives
  • 1/4 cup parsley, chopped
  • 1 lemon, juiced

Instructions

  1. Preheat your grill or skillet over medium-high heat.
  2. In a bowl, mix olive oil, oregano, garlic powder, salt, and pepper.
  3. Coat the chicken breasts with the mixture.
  4. Grill or cook the chicken for 6-7 minutes on each side or until fully cooked.
  5. Remove chicken and let it rest for a few minutes before slicing.
  6. In serving bowls, layer quinoa, chicken, tomatoes, cucumber, onion, feta, olives, and parsley.
  7. Drizzle with lemon juice before serving.
