Description
A hearty soup made with tender beef short ribs and caramelized onions.
Ingredients

- 2 lbs beef short ribs
- 4 large onions, thinly sliced
- 4 cloves garlic, minced
- 6 cups beef broth
- 1 cup red wine
- 2 tablespoons olive oil
- 2 teaspoons thyme
- Salt to taste
- Pepper to taste
- 1 baguette, sliced
- 2 cups Gruyère cheese, grated
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions and cook until caramelized, about 20 minutes.
- Add garlic and cook for 1 minute.
- Add beef short ribs and brown on all sides.
- Pour in red wine and scrape the bottom of the pot.
- Add beef broth and thyme.
- Season with salt and pepper.
- Simmer for 2 hours until the meat is tender.
- Remove short ribs, shred the meat, and return it to the pot.
- Preheat the oven to broil.
- Place soup in oven-safe bowls and top with baguette slices and cheese.
- Broil until cheese is bubbly and golden.
Notes
- For a richer flavor, use beef bone broth.
- Adjust seasoning to your taste.
- Serve immediately for best results.
