Ingredients

  • 2 cups vegetable broth
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 red onion, diced
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cook farro in vegetable broth according to package instructions.
  3. Toss diced zucchini, bell pepper, cherry tomatoes, and red onion with olive oil, salt, and pepper.
  4. Spread the vegetables on a baking sheet.
  5. Roast vegetables for 20-25 minutes until tender.
  6. Once farro is cooked, combine with roasted vegetables in a bowl.
