Description

Ingredients

  • 2 large eggplants
  • 2 cups ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 egg
  • 2 cups marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the eggplants lengthwise into thin strips and sprinkle with salt. Let them sit for 30 minutes to draw out moisture.
  3. Rinse the eggplant slices and pat them dry.
  4. In a bowl, mix ricotta, mozzarella, Parmesan, egg, garlic powder, Italian seasoning, salt, and pepper.
  5. Spread a layer of marinara sauce in a baking dish.
  6. Place a spoonful of the cheese mixture on each eggplant slice and roll them up.
  7. Arrange the rolls in the baking dish and cover with remaining marinara sauce.
  8. Bake for 25-30 minutes until bubbly and golden.
