Description

A simple and quick recipe for egg drop soup that you can make at home.


Ingredients

  • 4 cups chicken broth
  • 2 large eggs
  • 2 tablespoons cornstarch
  • 1 tablespoon soy sauce
  • 1/2 teaspoon ginger, grated
  • 1/4 cup green onions, sliced
  • Salt and pepper to taste

Instructions

  1. In a pot, bring the chicken broth to a boil.
  2. In a bowl, whisk together eggs and soy sauce.
  3. Mix cornstarch with a little water to create a slurry.
  4. Add the ginger and cornstarch slurry to the boiling broth.
  5. Stir continuously until the broth thickens slightly.
  6. Reduce heat and slowly pour in the egg mixture while stirring.
  7. Cook for another 1-2 minutes until the eggs are cooked.
  8. Season with salt and pepper, and garnish with green onions before serving.
