Description

A hearty and flavorful Cuban black bean soup that warms you up.


Ingredients

  • 2 cups dried black beans
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Juice of 1 lime

Instructions

  1. Soak the black beans overnight in water.
  2. Drain and rinse the beans.
  3. In a pot, heat olive oil over medium heat.
  4. Add onion, bell pepper, and garlic. Sauté until softened.
  5. Add beans, vegetable broth, cumin, and oregano.
