Description
A hearty and flavorful Cuban black bean soup that warms you up.
Ingredients

- 2 cups dried black beans
- 1 onion, chopped
- 1 bell pepper, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon oregano
- Salt and pepper to taste
- 1 tablespoon olive oil
- Juice of 1 lime
Instructions
- Soak the black beans overnight in water.
- Drain and rinse the beans.
- In a pot, heat olive oil over medium heat.
- Add onion, bell pepper, and garlic. Sauté until softened.
- Add beans, vegetable broth, cumin, and oregano.
- Bring to a boil, then reduce heat and simmer for 1 to 1.5 hours until beans are tender.
- Season with salt and pepper.
- Stir in lime juice before serving.
Notes
- Serve with rice or crusty bread.
- Top with avocado or cilantro for extra flavor.
- This soup can be frozen for later use.
