Description

A creamy and hearty potato soup made in a crockpot.


Ingredients

Scale
  • 6 medium potatoes, peeled and diced
  • 1 medium onion, chopped
  • 4 cups chicken broth
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup bacon bits
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Place potatoes and onion in the crockpot.
  2. Add chicken broth, garlic powder, salt, and pepper.
  3. Cook on low for 6-8 hours or high for 4 hours.
  4. About 30 minutes before serving, add cream cheese and stir until melted.
  5. Stir in cheddar cheese and bacon bits before serving.

Notes

  • For a thicker soup, mash some of the potatoes.
  • Garnish with green onions or additional cheese if desired.
