Description

A delicious and healthy cottage cheese enchilada bowl packed with flavor.


Ingredients

Scale
  • 1 cup cottage cheese
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 2 cups diced tomatoes
  • 1 cup shredded cheese
  • 1 tablespoon taco seasoning
  • 4 tortillas
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix cottage cheese, black beans, corn, diced tomatoes, taco seasoning, and half of the shredded cheese.
  3. Layer tortillas in a baking dish.
  4. Spread the cottage cheese mixture over the tortillas.
  5. Sprinkle the remaining cheese on top.
  6. Bake for 25-30 minutes until heated through and cheese is melted.
  7. Garnish with fresh cilantro before serving.
