- 1 cup cottage cheese
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 2 cups diced tomatoes
- 1 cup shredded cheese
- 1 tablespoon taco seasoning
- 4 tortillas
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix cottage cheese, black beans, corn, diced tomatoes, taco seasoning, and half of the shredded cheese.
- Layer tortillas in a baking dish.
- Spread the cottage cheese mixture over the tortillas.
- Sprinkle the remaining cheese on top.
- Bake for 25-30 minutes until heated through and cheese is melted.
- Garnish with fresh cilantro before serving.
