Description

A rich and moist chocolate muffin made with cottage cheese for added protein.


Ingredients

  • 1 cup cottage cheese
  • 1/2 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix cottage cheese, cocoa powder, sugar, and vegetable oil.
  3. Add eggs and vanilla extract, and mix until smooth.
  4. In another bowl, combine flour, baking powder, baking soda, and salt.
  5. Gradually add dry ingredients to the wet mixture.
  6. Fold in chocolate chips.
  7. Pour batter into muffin tins lined with paper liners.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
  9. Let cool before serving.

Notes

  • Store muffins in an airtight container for up to 3 days.
  • Can substitute chocolate chips with nuts if desired.
  • For a richer flavor, use dark chocolate chips.
