Ingredients

  • 2 kg crown roast of lamb
  • 4 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • Salt to taste
  • Pepper to taste
  • 2 tbsp olive oil
  • 1 cup red wine
  • 1 cup beef broth
  • Fresh herbs for garnish

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a bowl, mix garlic, rosemary, thyme, salt, pepper, and olive oil.
  3. Rub the mixture all over the lamb.
  4. Place the crown roast in a roasting pan.
  5. Pour red wine and beef broth into the pan.
  6. Roast in the oven for 1.5 hours or until the internal temperature reaches 60°C (140°F).
  7. Let it rest for 15 minutes before carving.
  8. Garnish with fresh herbs and serve.
