Ingredients

- 2 kg crown roast of lamb
- 4 cloves garlic, minced
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- Salt to taste
- Pepper to taste
- 2 tbsp olive oil
- 1 cup red wine
- 1 cup beef broth
- Fresh herbs for garnish
Instructions
- Preheat your oven to 180°C (350°F).
- In a bowl, mix garlic, rosemary, thyme, salt, pepper, and olive oil.
- Rub the mixture all over the lamb.
- Place the crown roast in a roasting pan.
- Pour red wine and beef broth into the pan.
- Roast in the oven for 1.5 hours or until the internal temperature reaches 60°C (140°F).
- Let it rest for 15 minutes before carving.
- Garnish with fresh herbs and serve.
