Ingredients

  • 1 lb chicken breast, diced
  • 1 cup cashews
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)

  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced

Instructions

  1. Heat vegetable oil in a pan over medium heat.
  2. Add garlic and ginger, sauté until fragrant.
  3. Add chicken and cook until browned.
  4. Stir in mixed vegetables and cook for 3-4 minutes.
  5. Mix soy sauce, oyster sauce, and cornstarch in a bowl.
  6. Pour sauce over chicken and vegetables, stir well.
  7. Add cashews and cook for another 2 minutes.
  8. Serve hot over rice or noodles.
