A comforting chicken potato soup that warms you up.
Ingredients

- 1 lb chicken breast, diced
- 4 medium potatoes, peeled and cubed
- 1 onion, chopped
- 3 carrots, sliced
- 2 celery stalks, chopped
- 4 cups chicken broth
- 1 cup milk
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Sauté for 5 minutes.
- Add chicken and cook until browned.
- Stir in potatoes, chicken broth, garlic powder, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 25 minutes.
- Add milk and heat through.
- Serve hot.

- Use leftover chicken for quicker preparation.
- Add herbs for additional flavor.
- Store leftovers in the fridge for up to 3 days.
