Ingredients

- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 2 cups cooked chicken, shredded
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup frozen peas
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup biscuits, cut into pieces
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until tender.
- Add garlic and cook for 1 minute.
- Stir in chicken and chicken broth. Bring to a simmer.
- Mix in heavy cream, peas, thyme, salt, and pepper.
- Add biscuit pieces and let simmer for 10 minutes.
- Serve warm.
