Description
A hearty chicken dumpling soup made from scratch.
Ingredients

- 1 whole chicken, cut into pieces
- 8 cups chicken broth
- 2 cups carrots, sliced
- 2 cups celery, chopped
- 1 onion, chopped
- 4 cups flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 cup butter, melted
- 1 cup milk
- 1 teaspoon dried thyme
- 1 teaspoon black pepper
Instructions
- In a large pot, combine chicken and chicken broth. Bring to a boil.
- Add carrots, celery, onion, thyme, and pepper. Reduce heat and simmer for 30 minutes.
- Remove chicken, shred the meat, and return it to the pot.
- In a bowl, mix flour, baking powder, and salt.
- Add melted butter and milk to the dry ingredients. Stir until combined.
- Drop spoonfuls of dough into the simmering soup.
- Cover and cook for 15 minutes or until dumplings are cooked through.
- Serve hot.
Notes
- Use fresh herbs for better flavor.
- Adjust seasoning to taste.
- Store leftovers in the refrigerator for up to 3 days.
