Ingredients

- 2 cups cooked chicken, shredded
- 2 cups corn, fresh or frozen
- 1 cup potatoes, diced
- 1 onion, chopped
- 2 carrots, diced
- 3 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons butter
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Melt butter in a large pot over medium heat.
- Add onion and carrots; sauté until soft.
- Add potatoes and corn; stir for 2 minutes.
- Pour in chicken broth; bring to a boil.
- Reduce heat; simmer until potatoes are tender.
- Stir in chicken and cream; heat through.
- Season with garlic powder, salt, and pepper.
- Serve warm.
Notes
- This chowder can be made ahead and stored in the fridge.
- Adjust thickness by adding more or less cream.
- Serve with crusty bread for a complete meal.
