Description
A hearty chicken corn chowder that warms you up.
Ingredients

- 2 cups cooked chicken, shredded
- 2 cups corn, frozen or fresh
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon thyme
Instructions
- Melt butter in a large pot over medium heat.
- Add onion and garlic; sauté until soft.
- Add chicken, corn, and chicken broth; bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Stir in heavy cream, salt, pepper, and thyme; heat through.
- Serve hot.
Notes
- Adjust seasoning to taste.
- Can add diced potatoes for extra texture.
- Store leftovers in the fridge for up to 3 days.
