Description

A hearty and flavorful beef enchilada soup made in a slow cooker.


Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) enchilada sauce
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup beef broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Shredded cheese for topping
  • Chopped cilantro for garnish

Instructions

  1. In a skillet, brown the ground beef over medium heat.
  2. Add the diced onion and minced garlic, and cook until softened.
  3. Transfer beef mixture to the slow cooker.
  4. Add black beans, corn, enchilada sauce, diced tomatoes, beef broth, chili powder, cumin, salt, and pepper to the slow cooker.
  5. Stir to combine all ingredients.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  7. Serve hot, topped with shredded cheese and chopped cilantro.

Notes

  • Adjust spiciness by adding jalapeños if desired.
  • Serve with tortilla chips for added crunch.
