Description

Crispy on the outside and cheesy on the inside, these air fryer arancini are a delightful snack or appetizer.


Ingredients

Scale
  • 2 cups cooked risotto
  • 1 cup mozzarella cheese, cubed
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 egg, beaten
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. In a bowl, mix the risotto, egg, salt, and pepper.
  3. Take a small amount of the risotto mixture and flatten it in your palm.
  4. Place a cube of mozzarella in the center, then form a ball around it.
  5. Roll the ball in breadcrumbs to coat it evenly.
  6. Spray the air fryer basket with olive oil and place the arancini inside.
  7. Air fry for 10-12 minutes until golden brown.

Notes

  • Use leftover risotto for best results.
  • Experiment with different cheeses.
