Description

Vietnamese Pho Beef Soup is a flavorful and aromatic noodle soup made with beef and fresh herbs.


Ingredients

Scale
  • 2 lbs beef bones
  • 1 lb beef brisket
  • 1 onion, halved
  • 1 ginger root, halved
  • 4 star anise
  • 1 cinnamon stick
  • 1 tbsp coriander seeds
  • 1 tbsp fish sauce
  • 1 tsp salt
  • 8 cups water
  • 8 oz rice noodles
  • Fresh herbs (basil, cilantro, mint)
  • Sliced lime
  • Sliced jalapeños

Instructions

  1. Roast beef bones in the oven at 400°F for 30 minutes.
  2. In a large pot, combine roasted bones, brisket, onion, ginger, star anise, cinnamon, coriander seeds, fish sauce, and salt.
  3. Add water and bring to a boil.
  4. Reduce heat and simmer for 6-8 hours, skimming any foam.
  5. Remove brisket, slice, and set aside.
  6. Strain the broth and return it to the pot.
  7. Cook rice noodles according to package instructions.
  8. To serve, place noodles in a bowl, top with sliced brisket and herbs, and pour hot broth over.

  • Serve with lime wedges and jalapeños.
