Vietnamese Pho Beef Soup is a flavorful and aromatic noodle soup made with beef and fresh herbs.
Ingredients

- 2 lbs beef bones
- 1 lb beef brisket
- 1 onion, halved
- 1 ginger root, halved
- 4 star anise
- 1 cinnamon stick
- 1 tbsp coriander seeds
- 1 tbsp fish sauce
- 1 tsp salt
- 8 cups water
- 8 oz rice noodles
- Fresh herbs (basil, cilantro, mint)
- Sliced lime
- Sliced jalapeños
Instructions
- Roast beef bones in the oven at 400°F for 30 minutes.
- In a large pot, combine roasted bones, brisket, onion, ginger, star anise, cinnamon, coriander seeds, fish sauce, and salt.
- Add water and bring to a boil.
- Reduce heat and simmer for 6-8 hours, skimming any foam.
- Remove brisket, slice, and set aside.
- Strain the broth and return it to the pot.
- Cook rice noodles according to package instructions.
- To serve, place noodles in a bowl, top with sliced brisket and herbs, and pour hot broth over.

- Adjust seasoning to taste.
- Serve with lime wedges and jalapeños.
