A healthy twist on classic meatloaf, these Turkey Meatloaf Muffins are moist, flavorful, and easy to make.


Ingredients

  • 1 pound ground turkey
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped onion
  • 1/4 cup chopped bell pepper
  • 2 cloves garlic, minced
  • 1 large egg
  • 1/4 cup milk
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 cup ketchup (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, onion, bell pepper, garlic, egg, milk, Worcestershire sauce, salt, pepper, oregano, and thyme.
  3. Mix until just combined.
  4. Grease a muffin tin and spoon the mixture into each cup, filling them about 3/4 full.
  5. Smooth the tops and spread a little ketchup on each muffin.
  6. Bake for 25-30 minutes or until the meat is cooked through.
  7. Let cool for a few minutes before serving.
