A healthy twist on classic meatloaf, these Turkey Meatloaf Muffins are moist, flavorful, and easy to make.

- 1 pound ground turkey
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped onion
- 1/4 cup chopped bell pepper
- 2 cloves garlic, minced
- 1 large egg
- 1/4 cup milk
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/2 cup ketchup (for topping)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, onion, bell pepper, garlic, egg, milk, Worcestershire sauce, salt, pepper, oregano, and thyme.
- Mix until just combined.
- Grease a muffin tin and spoon the mixture into each cup, filling them about 3/4 full.
- Smooth the tops and spread a little ketchup on each muffin.
- Bake for 25-30 minutes or until the meat is cooked through.
- Let cool for a few minutes before serving.
Notes
- These muffins freeze well for meal prep.
- Serve with a side of vegetables for a complete meal.
