Description

This sweet potato coconut soup is creamy and flavorful.


Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 1 can (400ml) coconut milk
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add sweet potatoes and ginger, stir for a few minutes.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat and simmer until sweet potatoes are tender.
  6. Stir in coconut milk and blend until smooth.
  7. Season with salt and pepper.
  8. Serve hot, garnished with fresh cilantro.
