Ingredients
- Edamame pasta – 200g
- Olive oil – 2 tablespoons
- Garlic – 2 cloves, minced
- Cherry tomatoes – 200g, halved
- Spinach – 100g
- Parmesan cheese – 50g, grated
- Salt – to taste
- Pepper – to taste
Instructions
- Cook edamame pasta according to package instructions.
- In a pan, heat olive oil over medium heat.
- Add minced garlic and sauté until fragrant.
- Add cherry tomatoes and cook until softened.
- Add spinach and stir until wilted.
- Combine pasta with the vegetable mixture.
- Add grated Parmesan, salt, and pepper. Mix well.
- Serve hot.

- Store leftovers in an airtight container.
- Reheat in a pan or microwave.
