Ingredients

- 1 cup millet
- 1 can chickpeas, drained and rinsed
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt to taste
- Pepper to taste
- Fresh parsley for garnish
Instructions
- Rinse the millet under cold water.
- In a pot, combine millet and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes.
- In a skillet, heat olive oil over medium heat. Add chickpeas, cumin, paprika, salt, and pepper.
- Cook chickpeas for 5-7 minutes until heated through.
- Fluff millet with a fork and serve in a bowl topped with chickpeas and parsley.

- Adjust spices based on your preference.
- Serve warm or at room temperature.
- Can be stored in the fridge for up to 3 days.
