Description

Ingredients

Scale
  • 1 cup millet
  • 1 can chickpeas, drained and rinsed
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt to taste
  • Pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse the millet under cold water.
  2. In a pot, combine millet and vegetable broth. Bring to a boil.
  3. Reduce heat, cover, and simmer for 20 minutes.
  4. In a skillet, heat olive oil over medium heat. Add chickpeas, cumin, paprika, salt, and pepper.
  5. Cook chickpeas for 5-7 minutes until heated through.
  6. Fluff millet with a fork and serve in a bowl topped with chickpeas and parsley.
