Description

A rich and creamy loaded potato soup topped with cheese, bacon, and green onions.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup green onions, sliced
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onion until translucent.
  2. Add the diced potatoes and chicken broth. Bring to a boil.
  3. Reduce heat and simmer until potatoes are tender.
  4. Use a potato masher to mash some of the potatoes for a chunky texture.
  5. Stir in the heavy cream and shredded cheese until melted.
  6. Season with salt and pepper.
  7. Serve hot, topped with bacon and green onions.
