Ingredients

- 1 cup soy curls
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 1 cup broccoli florets
- 1 carrot, sliced
- Salt and pepper to taste
Instructions
- Soak soy curls in hot water for 10 minutes, then drain.
- Heat olive oil in a pan over medium heat.
- Add onion, garlic, and ginger; sauté for 2 minutes.
- Add bell pepper, broccoli, and carrot; cook for 5 minutes.
- Add soaked soy curls and soy sauce; stir-fry for 3-5 minutes.
- Season with salt and pepper.
- Serve hot.
