Gingerbread blondies with a cream cheese swirl.

- 1 cup unsalted butter, melted
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 tablespoon ground ginger
- 1 tablespoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 8 ounces cream cheese, softened
- 1/4 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix melted butter, brown sugar, and granulated sugar until smooth.
- Add eggs and vanilla, and mix well.
- In another bowl, whisk together flour, ginger, cinnamon, nutmeg, baking powder, and salt.
- Gradually add dry ingredients to the wet mixture and stir until combined.
- In a separate bowl, beat cream cheese and powdered sugar until smooth.
- Spread half of the blondie batter in a greased baking pan.
- Drop spoonfuls of the cream cheese mixture on top and swirl with a knife.
- Spread the remaining blondie batter on top.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let cool before cutting into squares.
Notes
- Store leftovers in an airtight container.
- Adjust spices to taste.
- Serve with a dollop of whipped cream if desired.
