Description

Gingerbread blondies with a cream cheese swirl.


Ingredients

  • 1 cup unsalted butter, melted
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix melted butter, brown sugar, and granulated sugar until smooth.
  3. Add eggs and vanilla, and mix well.
  4. In another bowl, whisk together flour, ginger, cinnamon, nutmeg, baking powder, and salt.
  5. Gradually add dry ingredients to the wet mixture and stir until combined.
  6. In a separate bowl, beat cream cheese and powdered sugar until smooth.
  7. Spread half of the blondie batter in a greased baking pan.
  8. Drop spoonfuls of the cream cheese mixture on top and swirl with a knife.
  9. Spread the remaining blondie batter on top.
  10. Bake for 25-30 minutes or until a toothpick comes out clean.
  11. Let cool before cutting into squares.

  • Serve with a dollop of whipped cream if desired.
