Description
Classic French onion soup with rich flavor and melted cheese.

- 6 large onions, thinly sliced
- 4 tablespoons butter
- 1 tablespoon olive oil
- 1 teaspoon sugar
- 4 cups beef broth
- 1 cup dry white wine
- 2 tablespoons all-purpose flour
- 1 teaspoon thyme
- Salt and pepper to taste
- 1 baguette, sliced
- 2 cups grated Gruyère cheese
Instructions
- Melt butter and oil in a large pot over medium heat.
- Add sliced onions and sugar. Cook until caramelized, about 30 minutes.
- Sprinkle flour over onions and stir for 1 minute.
- Add broth, wine, thyme, salt, and pepper. Simmer for 30 minutes.
- Preheat the oven to broil.
- Toast baguette slices until golden.
- Serve soup in bowls, place toasted bread on top, and sprinkle with cheese.
- Broil until cheese is bubbly and golden.
Notes
- Use a good quality beef broth for best flavor.
- You can substitute Gruyère with Swiss cheese.
- Adjust the sweetness by varying the amount of sugar.
