Description
A rich and creamy chicken wild rice soup full of flavor.
Ingredients

- 1 lb chicken breast, diced
- 1 cup wild rice
- 1 medium onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
- 1 teaspoon thyme
- 1 teaspoon garlic powder
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Sauté until soft.
- Add diced chicken and cook until no longer pink.
- Stir in wild rice, chicken broth, thyme, garlic powder, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 45 minutes.
- Stir in heavy cream and heat through before serving.
Notes
- Store leftovers in the fridge for up to 3 days.
- Reheat gently on the stove.
